sometimes pain is worth it

last saturday and sunday, my neck was soooo sore to the point of unable to even turn and look at anything and i am going to blame it partially on this girl:


we went to the pharmacy formal for majority of the time and really only danced to almost one song, but it was sooo intense and so full of head flinging and flying that it put me in severe pain and in near vomit zone. 


before heading the the formal, we ate a lovely "dinner" at bricktown brewery filled with queso, cheese fries, and nachos (accompanied by beer of course) and once we got to will rogers theater, also ate the amazing food that was catered for us. it really was delicious. and filled with tons of cheeses.

i then went to a crazy/weird/really fun around the world party in norman with brad and tracy. we didnt actually do any of the around the world activities, but i did discover that someones computer has lots of music that i have been dying to have, but do not have the money for at this time. so once again, i danced and flung my head everywhere and made myself feel it for the next two days.

for some reason, i was the only one who actually dressed up to the theme of around the world. and tracy let me borrow some awesome maracas to go with my mexican dress! they ended up being slightly deadly though, bc during one of my dances, i accidentally hit tracy straight in the face with one, which was then followed by brad accidentally hitting her in the face with his hand.  thank goodness tracy was ok. i dont know what i would have done if an injury came from it.  i was more careful after that incident.

despite everything that came from dancing crazy, i will be flinging my head again! the goal was last night, but i was too exhausted. lame, i know. thank you school.

strawberry fields forever

i enjoy it when a small, yet refreshing, bowl of strawberries accompanies my watching of lecture videos. especially when i have to stay up at school super late because my mac is being difficult and not downloading them. it makes everything a bit sweeter.


just lovely.

it also makes me long for spring even more. dear spring, please hurry! i want to wear pretty skirts and not become a popsicle everytime i step outside!

and no, i didnt only eat one strawberry. i know that it appears this way, but i think the actual number was around five. i just gobbled them down too quickly for the others to make an appearance.

mumbles of excitement and procrastination!


callie will be here in 23 hours!!!! and i CANNOT wait!!!!! i cant even explain my excitement! it is to the point that i cant even concentrate on anything (which isnt good for my grades in any way). but i did make sure everything is extra clean! i bet no one would be able to notice, but i can tell everything has been vacuumed. i also made her some hair things that have been long over due, made an awesome playlist that will accompany our less than 24 hour adventures and even went looking for electric hand mixers, cupcake/cake carriers, and waffle makers!

now all i have to do is get through a pharmacy practice quiz (which is thankfully only 56 drugs this time), a lymphoma quiz, and chemo counseling! part of me is kind of glad there is so much to do since time will fly by.

sooooooo excited!!!!! this is just what i needed!

the best kind of hearts involve cream cheese frosting



i made a few little goodies this past valentines day. i brought some to school and gave them away, and saved some for myself of course. they were red velvet cookies with cream cheese frosting squished in the middle. also known as red velvet whoopie pies. this recipe really made me realize that i am in need of an electric hand mixer. the dough was soooo thick that my lack of arm muscles were not enough to mix it too well, and they were in extreme pain because of this.



overall, these cute little heart goodies were pretty good, i just cant decide how i feel about red velvet in a cookie form. if it was chocolate instead, i think i would have definitely loved them. i also should have put way more frosting in the center, afterall, that is my favorite part!

cheese coma filled with spicy excitement


so, i guess i lied in my previous macaroni post because the first mac and cheese i actually made was a spicy one! not spinach and artichoke. and let me tell you, it was the most amazing thing ever! and so far, it has provided me 4 meals! with at least 3 more! as long as im not a pig that is.


i ate four plates when i made it the other night because i just could not refrain no matter how hard i tried! but dont worry, the only cheese i used that wasnt 2% was the pepper jack, and that was only because it is impossible to find.


i WILL be making this again. im a bit afraid that i wont try any of the other ones that i want to try because i will just keep making this one over and over again.


the next time i make it, i will use 2-3 jalapenos (i only used 1 this time), a bit more onion, and much more roasted red peppers. i cant wait! and yes, if you cant tell, i do recommend you try it soon. you wont be disappointed!

another reason to look forward to spring break!

O.MI.GOSH!!! march 14, the liberty of london line at target will arrive and i absolutely CANT wait! i think i will need nearly everything in the collection! and my need i dont mean want, i seriously mean NEED! i will pass on the pillows though since i already have too many. but i think the teapot is a must and definitely some dresses and plates too! i LOVE florals sooo much!!!! i just cannot wait!


i am seriously freaking out.


and i didnt think target could make me love it more than i already do.

dear spring break, i know you will be here before i know it, but please, come faster!

for the love of cheese!

i have an extreme love for cheese. and by extreme love, i mean that the word extreme just may be an understatement. so imagine how i felt when i found a food blog dedicated to 30 days of macaroni and cheese?! basically, i fell in love and tried to decide how i can eat all of them! unfortunately, i cant make one everyday, so i am going to try to make at least one a month, hopefully more. IM SO EXCITED!

sorry diabetes class, it looks as though my diet will now consist of way more than 50% of my calories coming from fat. at least for the next 30 months or so.....

congrats brad, you only thought the amount of cookies and candy i consumed was absurd. i have truly become the most unhealthy person ever and wont ever tell you to not eat a 900 calorie sandwich from subway again.

snow bunny

a few weeks ago when my apartment complex turned into narnia, i took tulip outside for the first time on her leash to experience the snow! she was super cute and actually seemed to enjoy it. the snow that is, not the leash. she is not keen on the leash.


i think i may try to take her outside a bit more when i find enough time to be able to leisurely walk around. but i know it wont be as cute since there wont be snow for her to push around and make little paths with. regardless, she needs to have some more adventures!

what i am longing for


i have an urge to travel. unfortunately i cannot afford a crazy trip right now so i am going to try and have more little adventures with friends and with myself. even if it is only going to a park i have never been to or a restaurant i have been dying to try.

once i get out of school and am able to save up enough money, i hope to spend some time learning and understanding how other people experience the world.

for now, i will sit at the foot of my bed and watch the lovely snow fall while i wish for the sun to come back out. (and study of course)

late. but still well worth it!


i was lucky enough to welcome in the new year the most amazing way possible, with 4 of my bestest friends in new york (times square, of course)! i just wish callie and brad were able to join. i had an amazing time and instead of writing a crazy long post, i am going to post some of my favorite photos from the trip. and a list of things i learned.


i learned....


....how much i really love walking.

...that sometimes the middle of the cupcake is the best part.
...what this so called bocce game is.

...that brig and i are relatively successful at it.

...that beers can be expensive. go for the wine.
...that buying hotdogs from street vendors can be messy, but also very delicious and exactly what is desired after standing and singing for 7 hours.
...that laura has a long tongue.
...that soup dumplings may be the best food ever.
...its worth losing a few toes just to have the taste of the pizza crust from grimaldis in your mouth.
...that delicious food can be found on an unexpected street corner right when you need it.

give me some limes!


im yearning for the sun. for summer. basically, im not built for ice and snow and am ready for some warmth! so i decided to make margarita cupcakes to get into the mood. and maybe it will feel like im laying by the pool with a real margarita in my hand. i have aslo owed many people some vegan cupcakes for over a year now, so i think its about time for me to pay up.


i did learn something from this adventure. read the ingredients very carefully before going to the store. because i did not follow this, i had to squeeze my limes to death just to get extra drops of lime juice. i ended up being about 1/4 a cup short of lime juice. even after turning each lime inside out and squeezing the life out of it (and my hands) i think i ended up only being about 1/8 of a cup short. they were still very yummy though!


i also accomplished nothing else that needed to be done on wednesday. meaning all my sweaters are still dirty, my hair washing schedule got off a day and my nails still need major grooming. but i did get to watch the babies! love them!


and while im on the topic of cupcakes. during this snow venture, i finally made mine and cristina's second cupcake shirts! naturally, i wore mine today since i was giving out cupcakes.
